This is very true and it's why we see so many softshell and midlayer systems being offered by adventure/backpacking/racing companies like Arc'teryx, Columbia etc. GORE is not a breathable as they claim it is and you will melt to death moving around and building up heat but freeze when you stop moving. The key is to Layer properly

How do people find the eVent fabric to be like?

I have the Beyond Tactical PCU softshell jacket. You pretty much have to pop it into the washing machine ever so often, skin oil + salt from sweating etc. will remove the surface tension of the EPIC fabric and you'll need to wash it in the washing machine + a thorough wash with water, then left to air-dry. Real annoying.

BUT really light, easy to pack, really breathable yet windproof.
